Pomegranate mojito mocktail

For one drink

Ingredients

  • 1 handful of fresh mint, rinsed
  • ½ lime cut into smaller pieces, rinsed
  • 1½ tsp cane sugar
  • 100 ml pomegranate juice
  • 100 ml San Pellegrino Limonata
  • Ice cubes

Procedure

Rinse the mint and lime and dab dry. Keep some sprigs of mint and a thin slice of lime for decoration.

Pick the mint off the stem and pop into a cocktail shaker or a sturdy bowl.

Cut the lime into smaller pieces, and add to the mint.

Add the sugar. Using the end of a wooden spoon or mojito muddler, mash and muddle the mint, lime and sugar.

Pour the pomegranate juice on top and allow the sugar to dissolve.

Strain the mixture into a glass with ice cubes and top with the Limonata. Garnish with slices of lime and mint. Enjoy immediately.

Tip: Freeze ice cubes with fresh pomegranate seeds the day before in ice cube trays if you want to add another decorative touch to your mocktail.
