Rocky Road with Pistachio Nuts, Caramelised Almonds and Marshmallows
Try this new variant of the famed no-bake slice or tiffin packed with caramelised almonds, pistachio nuts, marshmallows and toffee. Indulge in this sweet treat with a cup of coffee in front of the wood fire, or serve up for festive season celebrations (Serves 4-6).
Preparation time: 35 minutes + 2 hours to cool
- 250 g quality plain chocolate, (e.g. Callebaut 54.5% or other fine chocolate with about 55% cocoa solids)
- 60 g caramelised almonds (store-bought or home-made in advance)
- 30 g pistachio nuts, unsalted, shelled
- 50 g marshmallows
- 60 g soft, chewy toffees
Chop the unsalted pistachio nuts, saving a few for decoration.
Chop the caramelised almonds, and cut the toffees and marshmallows into small pieces.
Cover a baking pan in baking paper. Now melt the chocolate gently over a water bath.
Stir the chopped caramelised almonds, pistachio nuts and toffee and marshmallow pieces into the melted chocolate and then spread the entire mixture out in the pan.
Top with a few chopped pistachio nuts. Refrigerate the mixture for at least 2 hours before cutting it into squares and serving.
