with lime dressing

Avocado salad

Lunch dish for 2.

This dressing is good for a simple salad, but also on grilled fish, fried prawns or on a bit of grilled chicken.

Ingredients

Salad

  • 2 cos lettuces in boats
  • ½ sliced cucumber
  • 6-7 thinly sliced radishes
  • 2 avocados
  • a little sesame - ideally black and yellow

Dressing

  • Juice of 3 limes – approx. 50 ml
  • 25 ml soy
  • 1 tsp sugar
  • 1 tsp grated ginger
  • 2 tsp finely chopped coriander

Procedure

Salad

Arrange the lettuce, cucumber and radishes in deep plates.

Halve the avocados, discard the stone and scoop out the avocado flesh with a spoon.

Arrange the avocado on the salad, drizzle with dressing and sprinkle with sesame.

Serve immediately.

Dressing

Squeeze the juice of the lime. Stir the lime juice together with the soy, sugar, ginger and coriander.

TIP: Top the salad with a bit of leftover roast chicken, some prawns or perhaps some sliced beef for a touch of luxury.
