Grilled lamb chops

Easy main dish serving 3-4 | 30 minutes

Easy dish for the barbecue. Enjoy with a large crisp salad and freshly made bread.



  • 2 courgettes
  • 300-400 g small tomatoes, preferably on the stem
  • A little olive oil
  • Salt
  • ½ tsp sugar
  • 3 tbsp red wine vinegar
  • ½ tsp finely grated garlic
  • 3-4 tbsp olive oil
  • A little chopped or dried oregano
  • A little good-quality feta


  • 8-12 small lamb chops
  • A little olive oil
  • Salt
  • 2 handfuls of chopped mint
  • 2-3 tbsp of chopped pistachio nuts


Warm courgette salad
Slice the courgettes lengthways, and brush the courgettes and the tomatoes with a little olive oil. Grill both on a hot barbecue. Season with salt. Mix the sugar with the vinegar, garlic and olive oil. Gently toss the warm vegetables with the dressing and the oregano just before serving. Top with feta cheese.

Brush the chops with olive oil and grill on a hot barbecue. Season with salt. Arrange the chops with the mint and pistachio nuts and serve immediately with the warm courgette salad.
