Gin Martini med salvie

Give the classic gin martini a twist with an aromatic sage simple syrup. Perfect as an apéritif before a fine dinner or for a stylish cocktail party (For 1 drink).


  • 4 cl gin
  • 2 cl freshly squeezed lemon juice
  • 3 cl sage simple syrup
  • 1 egg white (pasteurised)
  • 1 fresh sage leaf as garnish

Sage simple syrup

  • 1.5 dl sugar
  • 6-7 fresh sage leaves
  • 1.5 dl water


Sage simple syrup:

Boil 1.5 dl water with 1.5 dl sugar. When it comes to the boil, add the fresh sage leaves and stir. Set to simmer gently on low heat until all the sugar has dissolved. Turn off the heat and leave to cool with the sage leaves in the syrup.

Gin martini:

To a cocktail shaker, add gin, freshly-squeezed lemon juice, the cooled syrup, egg white and shake thoroughly. Once you have a good head of foam in the cocktail shaker, add a couple of ice cubes and carry on shaking until the shaker is cool to the touch. Strain the drink into a martini glass and garnish with a fresh sage leaf.

Tip: Any left-over simple syrup can be decanted into a scalded glass bottle or cleaned, scalded jam jar and will keep 1-2 weeks in the fridge.
