MATERIAL

Multi has three layers: a heat-conducting aluminium core encased in stainless steel. The aluminium spreads heat quickly and evenly – right up the sides – for precise temperature control, while the stainlesssteel exterior is extremely hard-wearing and can last a lifetime with minimal maintenance.

Heat distribution

The aluminium core spreads heat quickly and evenly – not just across the base, but all the way up the sides. This gives stable heat, easy temperature adjustment and fewer hot spots. You gain better control and reduce the risk of food burning or cooking unevenly.

The exterior

Copper’s outer layer gives the series its characteristic warm glow. Copper is known for its high heat conductivity and reacts quickly when you change the heat, making it easier to adjust as you cook and maintain a steady temperature. Over time, the colour will change. This does not affect the material’s ability to conduct heat.

SURFACE

The stainless steel cooking surface tolerates high heat and makes it easy to build flavour through fast browning and a well-developed crust. The steel is exceptionally durable, so you can stir, turn and scrape with metal utensils without worrying about wear. It cleans easily and needs no special treatment.

COPPER IN THE KITCHEN

Copper is a living material that changes character over time. Subtle shifts in colour are part of its charm and reflect the many meals you’ve made. The copper glow will gradually develop a darker patina and, at very high heat, the exterior may take on golden, purple or bluish tones. This is a natural reaction between heat, air and the surface.

The patina does not affect performance. The cooking surface is solid stainless steel, so the change is purely cosmetic. If you want the polished finish back, you’ll find helpful advice at the bottom of the page.

HOW TO KEEP THE GLOW

  • Wash the pot or pan thoroughly in warm water with mild washing-up liquid before first use
  • Start on low to medium heat and add fat once the pan is hot
  • Avoid overheating
  • Wash by hand and dry immediately

THE SECRET TO COOKING ON STEEL

Mastering a stainless-steel pan isn’t as hard as people think – but if you’re used to coated pans, it takes a little adjustment. Here’s the complete guide:

PREHEAT
Set the pan over medium heat and let it warm evenly. Test with a single drop
of water: if it beads into a small pearl and skates around, the pan is ready.

FAT FIRST
Use a high smoke-point fat: rapeseed, sunflower or grapeseed oil – or clarified
butter. Wait a moment until the surface looks glossy and fluid.

LET IT SIT
Place the food in the pan and give it space. On steel, it releases only once the
crust has formed. If it sticks, it needs a little more time.

WATCH AND LISTEN
Aim for a dry, steady sizzle. If things go quiet, turn the heat up slightly. If it
smokes hard or spits, ease the heat down.

WAIT TO FLIP
Turn only when the food releases easily – that’s your sign the crust has set.
Finish at a slightly lower heat for even doneness.

IS THE FOOD STICKING OR IS THE FOND GETTING TOO DARK?
Add a splash of water to the pan. It will steam up, evaporate quickly and
loosen the stuck bits while cooling the pan to stop burning. The browned,
caramelised bits lift off and become a delicious base for sauce.

Lids that always fit

With Eva Trio, one lid fits multiple pots and pans. All cookware is designed in fixed sizes, so lids are interchangeable across the collection – regardless of material, series, or age. A lid from 1977 still fits a brand-new pot today.

Choose the lid that suits your needs: a classic flat lid, a glass lid to keep an eye on cooking, a pouring lid for draining, or a dome lid for extra space.

All lids are ovenproof, dishwasher safe, and made from 90% recycled post-consumer steel.

CARE AND MAINTENANCE

Copper pots and pans are built to meet the demands of professional kitchens. Look after them, and they can last for generations. We do not recommend putting Copper in the dishwasher. Dishwashing will quickly cause the copper exterior to develop a heavier patina and lose its shine. This does not affect performance, but it will change the appearance.

Wash the pot or pan thoroughly in warm water with mild washing-up liquid before first use, and dry immediately. Copper is delivered with a thin protective surface treatment on the outside, designed to help prevent oxidation during transport and storage. It is easiest to remove with a normal hand wash.

After use, wash by hand with a soft sponge and mild soap, then dry thoroughly straight away.

BRING BACK THE COPPER GLOW

If your copper pots or pans need refreshing, you can easily make them bright again

  1. Dissolve approximately 2 tsp of citric acid in 2 litres of warm water and use the same ratio if you make more ensuring the entire product is covered
  2. Place the product in the mixture and leave for at least 15 minutes
  3. Remove any residue with a soft sponge or a small soft toothbrush
  4. Rinse in warm water with washing-up liquid and dry thoroughly
