Iced coffee with salted caramel

Ingredients

Salted caramel

  • 60 g water
  • 200 g sugar
  • 160 g whipping cream
  • 45 g butter
  • Seeds of ½ vanilla pod
  • ½ tsp. flake salt

Coffee

  • 3 dl strong coffee
  • 6-8 dl milk
  • 2 tbsp. maple syrup (Omit to reduce sweetness)
  • ice cubes

Topping

  • whipped cream
  • extra flake salt to taste

Procedure

Caramel sauce

Combine water and sugar in a heavy-bottomed saucepan, and bring to the boil until the sugar melts. Stir if necessary.

Leave the simple syrup to simmer and bubble until golden brown. Try not to stir it. If you do stir, use a wooden spoon. It takes about 40-45 minutes for the sugar to turn golden. Take care to ensure it doesn’t burn.

Remove the saucepan from the heat. Stir in the cream slowly and steadily. Finally, stir in butter and add the salt.

Pour the caramel sauce into a glass and refrigerate.

Coffee

Shake or stir coffee, milk and syrup to combine them.

Fill two glasses with ice cubes and pour in the coffee. Top with whipped cream and caramel sauce. Sprinkle with a little flake salt to taste and serve immediately.
