About Catalyzer

Catalyzer is a completely new type of bottle pourer. Its built-in magnet system treats the wine while you pour, in a process similar to natural ageing that gives the wine a rounder and more balanced taste.

To test Catalyzer, in spring 2010 we organised a blind tasting with three of Denmark’s best sommeliers, and they were unequivocal in their judgement.

“Catalyzer has a positive effect on the wine,” states Rasmus Amdi Larsen, who won third place at the Danish Championships for Sommeliers 2011. “In the blind test, we assessed the wines we were served to be 1-2 years older than they really were,” he says.

How it works

Catalyzer treats the wine in three different ways. First, it releases the flavours by breaching the ‘water barrier’ which encapsulates them. The water barrier is created by surface tension, which is broken by Catalyzer’s magnetic field. Second, Catalyzer releases the oxygen in the wine as you pour. As flavours are carried by oxygen, Catalyzer reveals and opens up more flavours in the wine.

Finally, Catalyzer moderates the tannins. There are often many tannins in young wine, and they account for their slightly bitter flavour. In older wines, the tannins aggregate over the years, so they are neutralised. It is this process which Catalyzer accelerates, so it only takes a moment – completely naturally, and without any additives.

Catalyzer is designed to ensure a gentle flow which protects the wine, preserving its freshness, aroma and character. An important feature, according to Rasmus Amdi Larsen: “It neither disturbs nor destroys the wine, which many other decanting devices do,” he says.

Make the most of Catalyzer

The winner of the Danish Championships for Sommeliers, Peter Pepke, is enthusiastic about Catalyzer. According to him, it will be of most benefit when used with young, full-bodied wines or full-bodied aromatic wines.

“With these wines, Catalyzer will moderate the tannins and the primary notes, which are the aromas that indicate it is a young wine,” he explains. “At the same time, it enhances the secondary aromas which develop during ageing in casks, and the tertiary aromas which the wine acquires when it matures in the bottle.”

Try it yourself

Try out Catalyzer for yourself – preferably with a full-bodied wine. First taste a mouthful of wine which has passed through the bottle pourer, and then taste some wine which has not. You will clearly taste the difference.
